Ingredients:
1 pound green beans, washed and trimmed
1 medium sweet onion, sliced
1 grapefruit, segmented
1 lime
nuts of your choice (I used diced macadamias)
Coconut oil or olive oil
Directions:
Start by sautéing onion in oil until soft. I like to use coconut oil since it gives the dish a nice tropical flavor, especially with the macadamias, but you can use olive oil as well.
Add the green beans, and cook until tender.
In the meantime, zest and juice one lime. I do this right into the serving bowl.
Add grapefruit segments.
Once the beans and onions are done, add them to the bowl. Mix, add grapefruit juice if it needs more acid, and salt to taste. Garnish with the macadamia nuts.
Oh, but what do you go with the grapefruit juice? Just add vodka and make a Greyhound! You might have to supplement with store-bought grapefruit juice as well. It's like a screwdriver (OJ and vodka), except not as sweet, and we aren't 21 anymore, so it's an acceptable grown-up drink.
