Coconut Macaroons from How to Be a Domestic Goddess by Nigella Lawson.
I received this book as a gift for my 21st birthday. Who gives a college senior a cookbook? Apparently a friend who knew that I was destined to be a stayathomeista!
Ingredients:
2 large egg whites
1/4 teaspoon cream of tartar
1/3 cup sugar
2 tablespoons ground almonds
pinch f salt
1 teaspoon vanilla extract (or coconut, almond, orange...)
1 cup plus 2 tablespoons shredded coconut (*not* grated)
Preheat oven to 325.
Beat egg whites til frothy, no more. Add the cream of tartar and keep beating until soft peaks form, this takes a looooong time, so I strongly recommend using a stand mixer for this recipe! Then add the sugar a tablespoon at a time (or so) until stiff peaks form. Then fold in almonds, salt, vanilla and coconut.
Using an ice cream scoop, drop rounded mounds onto a parchment (or SilPat) lined baking sheet.
Cook for 20 minutes until lightly golden.
This makes 8 macaroons, which is not nearly enough, so I always make a double recipe.
