Peanut Dipping Sauce

Chicken is pretty much a standard go-to dinner in most houses. Last night I made chicken tenders (just sauteed) but I let my daughter make the dipping sauce (which, incidentally, she did not consume). Easy, three ingredients, and so yummy.

OK, I know something is either really right or really wrong if, of her own volition, she is using her own camera to take pictures of food.




I used a 3-2-1 method which makes life even easier for a four year old who wanted to make the entire thing herself (the sauce, not the hot-stove-chicken-cooking part). 3 parts peanut butter, 2 parts coconut milk, 1 part lime juice. Mix.

  4. I am SO going to make this- I have the TJ's vanilla Coconut milk which I think will compliment the natural peanut butter. I'll let you know how it turns out!

  5. Love the sauce idea - sounds very yummy! Too funny that she ended up not eating it. I noticed your gorgeous white marble countertops by the way - thinking of getting some of my own but my mom thinks they're not a good idea (because they stain easily?). What are your thoughts? Do you like? Would you buy again? Sorry for the non sequitur!

  9. Ok..that looks really good! Gonna have to add that one to the list!! My kids would love it!! (mine are teenagers, so I'm putting them in charge of the sauce for sure!!)

  11. Yum! I can always use an easy dinner idea.

    Now if Trader Joes would just sell lime juice, good TP, and ziploc baggies, I'd never have to go to Safeway. I swear, one day I'm going to run into at both places!

  13. turned out GREAT- everyone loved it-
    Instead of dipping sauce I just sauteed the chicken with the peanut butter, vanilla coconut milk and i used a squirt of lemon juice at the end and garnished with fresh cilantro from our garden-
    OF COURSE- I didn't take a photo (which is so unlike me) but someone was running late to get to taekwondo…

  14. I eat peanut sauce by itself at a restaurant! :) So this is right up my alley. Anything with peanut butter--you can't go wrong! Speaking of peanut butter and easy--
    Easiest ever Peanut Butter Cookies...ready?
    1 cup Peanut Butter
    1 cup sugar
    1 egg
    Mix together, spoon onto cookie sheet, do the little criss-cross-fork thing.....350 degrees, 8-10 minutes.....yummo!!!
    3 ingredients! No flour! Stuff you always have on hand! Try it!
